A typical coffee house latte is loaded with sugar, so why not make your own with some coconut milk and almond milk, your own choice of sweetner? Don't shake it, because you want the coconut water to set at the bottom and coconut oil float to the top. Next day, turn the can upside down slowly, so the coconut is on top, and coconut is at the bottom. Pour out the coconut water and reserve only the coconut solid. When it’s hot out, I don’t really feel like cooking either. Have to keep things simple these days. This dairy free chocolate pudding is easy and good for your waistline, thanks to the Mori-nu tofu. Mori-nu tofu is the best for desserts because it has super smooth texture and very little soy taste. A perfect substitute for cream and a low fat diet. 1/4 of the box has only 45 calories and 1.5 grams of fat. You can find them in large grocery stores in the US now (I got it from Kroger), and here is the link to their website http://www.morinu.com . Chill it for a couple of hours before serving to make it a bit more firm, especially if you use the soft tofu. In the recipe, I use silken extra firm tofu.   For sweetener, you can use either brown rice syrup (also from Kroger), or liquid Stevia as a sugar free alternative. A few months ago I attended the Natural Product Expo West in California, where I met Chloe Coscarelli. Chloe is the winner of Food Network’s Cupcake Wars, and she won it with her vegan cupcake! I was very excited to meet her in person and get her signed cookbook- Chloe’s Vegan Desserts.    I LOVE to bake for some weird reason. I used to bake all kinds of cookies, muffins, and cakes, and  bring them to work. Three years ago, I won second place in a company-wide bake-off contest. I spent weeks practicing baking leading up to the competition, because I had never baked anything before. I will have to tell you what I made in another post. Anyways, I was pretty proud of myself and really enjoyed the process. Baking is quite an interesting activity, and it relaxes my mind in the same way music does. But now the challenge is in finding something healthy to bake, which is why I don’t do it often any more.  In Chloe’s book, there is a Yoga Cupcakes that caught my eyes. Sounds pretty healthy to me, as she pointed out there are only 113 calories per cupcake.  I made my version of those with Stevia to lower the sugar and calories even more. If you are interested in using stevia in baking cakes, I recommend only replacing 50% of the sugar with it if you can. Because sugar helps rising the dough. Found some interesting dairy free dark chocolate bars at Kroger today. Mmmm, yum… Guess what, it is Not Hershey’s. It is imported from Israel! Thank you, Israel. I love bitter and dark chocolate.  Right away I thought of dipping bananas in it.  What could be better than that, right? Wait, how about dark chocolate banana pops rolled in peanuts? Print Dark Chocolate Banana Pop (Dairy Free, Vegan) Cook Time: 25 minutes Yield: 10 Ingredients1 Package of Dairy Free Dark Chocolate (see photo) 2 ripe yellow bananas 3 Tbsp of toasted peanuts 10 tooth picks, or corn picks or chop sticksInstructionsPeel the bananas, and cut them into small chunks. About 5 small pieces per banana If you have a food processor, pulse the peanuts in it for 5 times to get them finely chopped. Alternatively, put peanuts in a ziplock bag, lay it over a towel and gently hammer them with a real hammer. Spread the peanuts on a large plate. Melt chocolate in microwave for 20 seconds, stir and heat again, repeat until chocolate melts and looks runny. About 2 minutes. Carefully not to overheat chocolate. Let it cool for a couple of minutes. Stick a corn pick into a banana chunk, dip it in chocolate, roll it in peanut crumbles, and set it upright on a plate. Repeat for the rest of the bananas. Today is St.Patrick’s day, so how about a Green smoothie!  I always have a variety of leafy green vegetables on hand, it took less than 2 minutes to whip up this power house smoothie. Secret ingredient #1: frozen banana.  Bananas are delicious frozen. They can replace ice cubes in a smoothie, and add sweetness as well as body to it. Secret #2: ground chia powder. Chia is everywhere these day because of its abundant fiber and omega-3.  It also helps thicken the smoothie.   Drink this smoothie for morning, snack or dessert, and you will see your skin glow in no time.
